  • 8 T butter softened (1 stick)
  • 1 2/3 c confectioners' sugar (190g)
  • 1 t vanilla
1.  Using a hand mixer, cream the butter and then add the confectioners' sugar, beating well with an electric beater or with a whisk until it is creamy and pale yellow. At first it looks like it is not coming together but all of a sudden it will mix and thicken just fine.
2.  Add the vanilla and blend.
3.  Refrigerate until it firms up.
Remove it from the refrigerator about 15 minutes before serving to let it soften slightly. Serve with Chocolate Bread Pudding or Plum Pudding for a real treat.
