- 1 lb split peas, washed
- 9 c water/stock (5 c water, 4 c chicken stock)
- 1 smoked ham hock or left over ham bone
- 1/2 c chopped onion
- 1 c chopped celery with leaves
- 1/2 c chopped carrots
- 1 clove garlic, crushed
- 1 bay leaf
- 1 dash cayenne
- 1 t dried thyme
- 1/2 t oregano
- 2 t salt
- salt and fresh ground pepper to taste
- Enameled cast iron dutch oven or other heavy bottomed pot
- Immersion blender or regular blender
- Large spoon for stirring
- Strainer
