Ingredients
  • 1 lb split peas, washed
  • 9 c water/stock (5 c water, 4 c chicken stock)
  • 1 smoked ham hock or left over ham bone
  • 1/2 c chopped onion
  • 1 c chopped celery with leaves
  • 1/2 c chopped carrots
  • 1 clove garlic, crushed
  • 1 bay leaf
  • 1 dash cayenne
  • 1 t dried thyme
  • 1/2 t oregano
  • 2 t salt
  • salt and fresh ground pepper to taste
Equipment
  • Enameled cast iron dutch oven or other heavy bottomed pot
  • Immersion blender or regular blender
  • Large spoon for stirring
  • Strainer
