  • 1-2 t cajun seasoning (or your favorite seasoning)
  • 1/2 c onion, diced
  • 1/2 c celery, diced
  • 1/2 c carrots, diced
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 3/4 c white rice
  • 2 c chicken stock and/or water
