- 1 lb dried red kidney beans
- 1 qt chicken stock
- 2 c water
- 2 c. chopped onion
- 1 c. chopped celery
- 1 c. chopped bell pepper
- 1 bay leaf
- 1 lb smoked sausage, roasted and sliced (See Instructions)
- 2 t dried thyme
- 2 t dried oregano
- 1 1/2 t garlic powder
- 1/4 t cayenne pepper
- 1/4 t white pepper
- 1/4 t black pepper
- salt to taste
- chopped green onions for serving (scallions)
- cooked rice, about 1/2 - 1 c per person
